Lindsay's Curried Orange Soup

1 tsp | canola oil |
1 1/2 tsp | minced garlic |
1 tsp | hot curry powder |
1/2 cup | chopped onions |

shallots, alternative | |
1 lb | carrots, peeled and chopped |
3 3/4 cups | chicken broth |
1 cup | peeled, diced sweet potatoes |
Pinch | turmeric |
1 T | Ginger |
Salt | |
pepper | |
1/2 cup | orange juice |
1 T | grated orange zest |
1 T | honey |
2 T | butter |
1/4 cup | heavy cream |
In a large pot, heat oil over medium heat. Add garlic, curry, onion and carrot. Cook 5 mins. Add broth and sweet potatoes; bring to a boil. Cover and simmer 25 mins.
Transfer to a blender and purée. Return to pot and stir in juice, honey, zest, cream and butter.
