Spaghetti Bolognese

    1   Large red onion, cut up the onion in chunks before putting into food processor
    2   Large cloves garlic, peeled
    1  Carrot, peeled and trimmed
    1  Stalk of celery, ends trimmed
To Make Meat Sauce: Pour enough olive oil to coat the bottom of the large pan that you're going to make the sauce in. Chop all items above in the food processor. In your large pan, add the chopped vegetables to the hot olive oil, and begin cooking them over a medium flame (medium heat), stirring them frequently. The vegetables should cook for about 15 minutes. While the vegetables cook, crumble the meat in a big bowl to get it ready to add to the pan:
    1 Pound  Ground meat or Italian sausage or a combination of the two
      
Now add the meat to the pan with the vegetables, and stir well, crumbling ot with your spoon. When the meat is no longer pink, you will add to the pan:
    6  Small (8oz cans) tomato sauce, Some red wine (or water) that will clean out the leftover sauce in the can
    3 Tbsp  Dried Italian Herbs
    3 Tbsp  Fresh basil and parsley , mixed together, finely chopped
    1 Tsp  Sugar
    2-3  Bay leaves
      Salt and pepper, to taste
Start adding the tomatoe sauce to the pan, one can at a time
When the cans are empty, pour a bit of red wine to each empty can
Stir the red win (or water) in the can, which will get all of the sauce in the can, then pour the liquid from each can into the pan
Now add the dried and fresh herbs to the pan, some sugar, and the bay leaves, salt and pepper
Stir the sauce to mix everything, and then turn the heat down very low, and every so often come by and stir the sauce some more
The sauce should cook for at least one hour...it tastes really delicious if you can cook it for two hours. When the sauce is almost ready, cook your pasta.
