Tonight for supper I'm making beans and rice. Crumbled up a leftover hamburger from last night, put it in my rice cooker with enough brown rice to make 3 cups, added a quarter cup of dried lentils, some chile powder, cumin, and paprika. Used leftover turkey stock from Thanksgiving that was in my freezer for the cooking liquid. It's a quick, easy meal with very little cost and actually has some nutritional value. Then just heat up some frozen veggies and make some dinner rolls. Dinner rolls (makes 4): | |
1 cup | flour, (I use 3/4 cup white and 1/4 cup whole wheat) |
1 tsp | baking powder |
1/2 tsp | salt |
1 tbsp | vegatable oil |
1/2 cup | milk |
Mix the dry ingredients together, then mix the milk and oil together in a cup. Add the milk to the dry mixture and stir lightly until blended. Place dough on well floured board and roll out to 1/2 inch. Cut with glass or biscuit cutter, place on cookie sheet. Place a very thin piece of butter or margarine on one half of the dough circle and fold the dough over into a half circle. Bake at 350 degrees until lightly brown, then remove from oven and rub top with butter.
