Chicken Adobo

3 lbs | chicken pieces, legs & thighs |
1/2 cup | soy sauce,, (use low sodium if want it less salty) |
3/4 cup | white vinegar, or Rice Vinegar for less acidity |
1 or 2 heads | garlic, crushed |
2 | bay leaves |
1/2 tablespoon | black peppercorns |
Bring to a boil the chicken together with all ingredients and simmer for 40 to 50 minutes, or until done. Remove chicken and let the sauce reduce to desired consistency. OPTIONAL: Broil chicken pieces for 5-10 minutes. Place chicken in a serving dish and pour reduced sauce over pieces.
