Mashed Potato pancakes

| 2 c. | leftover mashed potatoes |
| 1 slightly beaten egg | |
| 1/4 c. | chopped onion |
| 1/4 c. | flour |
| Salt | |
| pepper to taste | |
Mix all ingredients together. Drop by heaping tablespoons into lightly greased skillet. Flatten out with fork and brown on both sides.
