Carrot, Ginger, Pear Soup

5 cups | peeled, sliced carrots |
4 | pears, peeled, cores and diced |
1 | onion, chopped |
2 cups | chkn broth |
2 cloves | garlic, minced |
1/4 cup | ginger, peeled & chopped |
1/3 cup | butter |
1/4 cup | all purpose flour |
4 cups 2% | milk |
Salt | |
pepper to taste |
Combine first 6 ingredients in large saucepan. Bring to a boil, then reduce heat, cover and simmer for 30 min or until veg are tender
Purée veg mixture in blender until smooth
Melt butter in large saucepan
Add flour, mixing until smooth
Gradually add milk
Cook, stirring constantly until mixture comes to boil and is smoothly thickened
Stir in carrot purée. Heat through.
Season to taste with salt and pepper. Serve warm.
Baking time: 30 min
8 servings
Tip - drizzle sr cream on top of each serving makes attractive presentation
