Penne a la Vodka

    1 lb  penne pasta
    2 Tbsp  olive oil
    1 can  fire roasted diced tomatoes
    15 oz  tomato sauce
    5 oz  vodka, (adjusted to taste)
    1 tsp  paprika
    2 tsp  oregano, (divided)
    2 tsp  basil, (divided)
    1/2 tsp  salt
    1/2 tsp  pepper
    1 c  heavy cream
    1 lb  skinless kilbasa, (or Italian Sausage)
      grated parmesan

Cut sausage on the bias in about ½” slices. Brown sausage in large pot with olive oil until lightly browned. Start cooking penne until al dente, about 11 minutes. As pasta is cooking, use the tomato sauce to deglaze your pot then add tomatoes and paprika, 1 tsp oregano, 1 tsp basil, salt, and pepper. Turn heat down to simmer the mixture and add vodka. Bring mixture back to simmer and add remainder of oregano and basil. Simmer sausage mixture, stirring occasionally for about 6 minutes. Add the cream and simmer for 2 minutes, stirring constantly. Cut heat and add pasta. Toss or stir well and served sprinkled with Parmesan.
