Zucchini Pie

Crust: Filling: | |
4 c | flour. 8 c zucchini |
1 1/2 c | margarine., ( peeled- cored- sliced) |
1 t | cinnamon. 2/3 c lemon juice |
1 c | sugar. 1, 2-3/4 c sugar |
Dash salt. 1/2 t nutmeg
Mix until crumbly. 1 t cinnamon
Simmer zucchini and lemon juice until tender.
Add sugar and spices. Cook 3-5 min
Add 1/2 c crust mixture - stir until thickened
Put 1/2 crumb mixture in bottom of 9 x13 pan, pat down
Bake at 350 for 5 min. Remove
Pour filling in and spread evenly
Put rest of crust over top, pat down
Sprinkle with cinnamon
Bake at 375 for 30 min
