Eggnog Cheesecake

1/2 cup | unsalted butter |
70 vanilla wafers or 2 cups crumbs | |
3 x 8 oz | pkg cream cheese, softened |
1/2cup | sugar |
2 | eggs |
2 T | flour |
2 tsp | rum extract |
1/4 cup | whipping cream |
1 tsp | nutmeg |
1 tsp | vanilla |
1/2 tsp | allspice |
Preheat oven to 300•
Microwave butter until almost melted. Stir in wafer crumbs. Press into bottom and sides of 11" fluted tart pan with removable bottom.
Refrigerate.
Cut cream cheese into chunks and place in processor. Add sugar and whirl until smooth. Add eggs, flour, rum, whip cream, nutmeg, vanilla and allspice. Whirl until mixed. Place pan on baking sheet. Fill.
Bake 30-35 mins. Cool 1 hr..Freeze up to 2 mos..
