This soup gets its wonderfully creamy texture from pureed carrots & sweet potatoes rather than cream.
    2 tbs  olive oil
    ½ cup  chopped shallots
    3 cups  sweet potato, peeled, 1/2" cubed
    1 1/2 cups  carrots, peeled, 1/4" sliced
    1 Tbs  grated ginger
    2 tbs  curry powder
    3 cups  chicken broth
    ½ tsp  salt

1 Heat oil in a large saucepan over medium-high heat. Add shallots; sauté 3 minutes or until tender. Add potato, carrots, ginger & curry; cook 2 minutes. Add broth; bring to a boil. Cover, reduce heat & simmer 25 minutes or until vegetables are tender; stir in salt.
2 Pour half of soup in a food processor; pulse until smooth. Repeat procedure with remaining soup.
