Karen's Cherry Almond Chocolate Clusters

1 cup | whole almonds, toasted and coarsely chopped |
1/2 cup | dried cherries, coarsely chopped |
6 oz | dark chocolate, (70%), finely chopped |
In medium bowl, toss together almonds and cherries.
Line baking sheet with wax paper.
Melt half the chocolate in the top of a double boiler. Make sure water in bottom pan does not touch top pan.
Remove from heat. Stir in rest of chocolate. Wipe bottom of pan after removing from pan of water. Fill bottom of double boiler with warm tap water to keep top pan of chocolate tempered.
Stir fruit and nuts into chocolate.
Spoon clusters onto sheet.
Refrigerate 10 mins to set.
Store and serve at room temperature.
Makes 12.
