Karen's Alehouse Cheddar Soup

1 | garlic bulb, roasted |
1 | sweet onion, chopped and caramelized |
1 | red pepper, diced small |
1 | carrot, diced small |
2 | shallots, chopped |
2 qts | vegetable stock |
1pt | heavy cream |
2 lbs | cheddar, shredded |
22 oz | Firehouse Ale |
3 lge | Yukon potatoes, diced in 1/2" |
1/4 lb | butter, (unsalted) |
Olive oil |
Sauté shallot, pepper and carrot in 2 T oil and 1 T butter.
Add bottle beer.
Simmer 5 mins.
Add carmelized onions, potatoes, stock and butter. Simmer.
Remove from heat and add cream, garlic, cheddar SLOWLY and whisk.
Purée. Add salt and pepper, chives and croutons.
Makes 1 gallon.
