    1  garlic bulb, roasted
    1  sweet onion, chopped and caramelized
    1  red pepper, diced small
    1  carrot, diced small
    2  shallots, chopped
    2 qts  vegetable stock
    1pt  heavy cream
    2 lbs  cheddar, shredded
    22 oz  Firehouse Ale
    3 lge  Yukon potatoes, diced in 1/2"
    1/4 lb  butter, (unsalted)
      Olive oil

Sauté shallot, pepper and carrot in 2 T oil and 1 T butter.
Add bottle beer.
Simmer 5 mins.
Add carmelized onions, potatoes, stock and butter. Simmer.
Remove from heat and add cream, garlic, cheddar SLOWLY and whisk.
Purée. Add salt and pepper, chives and croutons.
Makes 1 gallon.
