Bacon and Cheese Strata

| 4 slices | day old bread |
| 6 slices | bacon, cooked and crumbled |
| 6 lg | eggs |
| 1-1/2C | whole milk |
| 1/4tsp | salt |
| Pepper | |
| 2 drops | tabasco |
| 1/2C | grated cheddar |
| 1/2C | grated Monterey jack |
| 3tbsp | chopped parsley |
| 1/2 | red bell pepper, seeded and cut into rings |
8 x 11.5" baking dish- oiled
Arrange bread, overlapping slightly
Scatter bacon
In bowl whisk eggs, milk, salt, pepper, Tabasco. Fold in parsley and 1/2 of cheese. Pour on bread. Cover with remaining 1/2 cheese. Cover and refrigerate overnight.
Preheat 350F. Bring strata to room temp. Arrange pepper rings on top. Bake uncovered 45-50 min. Stand 10 min.
