Maple-Bourbon Glazed Salmon

1/2 cup | maple syrup |
1/4 cup | cider vinegar |
2 tbsp. | Whole grain dijon mustard |
2 | garlic cloves, pressed |
1/4 tsp. | Salt |
1/4 tbsp. | bourbon |
Salmon fillets | |
1 tbsp. | Crushed peppercorn & garlic rub |
Combine syrup, vinegar, mustard, garlic, s&p and microwave on high for 6-8 minutes or until reduced by half. Cool slightly, add bourbon and set aside. Grill or cook in skillet until salmon flakes easily with a fork. Brush fish with glaze during last minute of cooking and pour remaining glaze over salmon before removing from pan.
