Spaghetti with Ratatouille Sauce

40 g | Pasta |
1 spray | oil spray |
½ | Red onion |
1 clove | Garlic, crushed |
160 g | vegetables |
175 g | Pasta sauce, tomato based |
1½ tsp | Dried mixed herbs |
30 g | reduced fat Feta cheese |
1. Cook the pasta according to the instructions on the packet.
2. Heat the oil in a small pan then add the onion and garlic. Cook for 2 minutes and then add the diced vegetables and cook for a further 5 minutes. Add a little water to the mixture if it becomes dry.
3. Stir in the herbs and pasta sauce and allow to simmer for 8 minutes.
4. Mix in the cooked pasta and serve topped with crumbled feta.
