Vegetable Stir-Fry with Pasta

    1 tsp  olive oil
    2 oz  onion
    1 clove  garlic
    ½ inch  root ginger
    2 oz  green pepper
    2 oz  carrot
    2 oz  frozen broccoli
    2 oz  frozen sweetcorn
    2 oz  canned chickpeas
    2 oz  pasta
    2 tsp  soy sauce

1. Heat the oil in a large non-stick pan, add the chopped onion, crushed garlic and finely chopped ginger and cook for 2-3 minutes.
2. Slice the pepper, carrot, broccoli and sweetcorn into similar sized pieces.
3. Add to the pan with a splash of water and cook over a medium-high heat for 5-10 minutes, stirring frequently. Stir in the drained chickpeas.
4. Meantime, cook the pasta. Once cooked, add to the vegetable stir-fry, stir in the soy sauce and serve.
