Vegetable Pasta Bake

2 oz | pasta |
½ tsp | olive oil |
½ | onion |
1 clove | garlic |
2 oz | mushrooms |
1 ball | frozen spinach |
¼ tsp | dried mixed herbs |
1 small tin | canned tomatoes |
2 tbsp | dried breadcrumbs |
2 tsp | pine nuts |
1. Preheat the oven to 180°C.
2. Cook the pasta following package directions, omitting any suggested fat or salt.
3. Meanwhile, heat the oil in a non-stick pan and cook the chopped onion, crushed garlic and sliced mushrooms for 3-4 minutes. Add the thawed and drained spinach, mixed herbs and the tomatoes.
4. Bring to a boil and simmer, uncovered, for 10 minutes.
5. Pour into an oven-proof casserole dish along with the cooked and drained pasta. Top with the breadcrumbs and pine nuts.
6. Bake for 20 minutes, covering with foil halfway through the cooking time.
