Quick Seafood Rice Salad
Nb persons: 1
|1 oz||brown rice|
|½ tbsp||olive oil|
|½ tbsp||lemon juice|
|1 tbsp||fresh parsley|
|2 oz||canned salmon|
|2 oz||frozen prawns|
1. Boil the rice following package directions, omitting any suggested salt.
2. When the rice is cooked, drain and gently mix in the olive oil and lemon juice.
3. Allow to cool and add the sliced spring onion, chopped parsley and seafood.
