Quick Seafood Rice Salad

1 oz | brown rice |
½ tbsp | olive oil |
½ tbsp | lemon juice |
2 | spring onions |
1 tbsp | fresh parsley |
2 oz | canned salmon |
2 oz | frozen prawns |
1 | pear, additional |
1. Boil the rice following package directions, omitting any suggested salt.
2. When the rice is cooked, drain and gently mix in the olive oil and lemon juice.
3. Allow to cool and add the sliced spring onion, chopped parsley and seafood.
