Fruity Rice Salad

1¼ oz | brown rice |
1 tsp | olive oil |
½ | onion |
1 stalk | celery |
1 oz | sultanas |
4 oz | grapes |
1 tsp | flaked almonds |
1 oz | frozen peas |
1 pinch | turmeric |
1 pinch | ground ginger |
1 pinch | ground coriander |
1. Cook the rice according to the pack instructions, adding in the frozen peas in the last few minutes of cooking time.
2. Heat the oil in a large frying pan and sauté the onion and celery for 3-4 minutes.
3. Stir in the cooked rice, the fruit, cooked frozen peas, flaked almonds and spices. Season and mix well.
4. Serve the salad warm or cold.
