Fruity Rice Salad

    1¼ oz  brown rice
    1 tsp  olive oil
    ½  onion
    1 stalk  celery
    1 oz  sultanas
    4 oz  grapes
    1 tsp  flaked almonds
    1 oz  frozen peas
    1 pinch  turmeric
    1 pinch  ground ginger
    1 pinch  ground coriander

1. Cook the rice according to the pack instructions, adding in the frozen peas in the last few minutes of cooking time.
2. Heat the oil in a large frying pan and sauté the onion and celery for 3-4 minutes.
3. Stir in the cooked rice, the fruit, cooked frozen peas, flaked almonds and spices. Season and mix well.
4. Serve the salad warm or cold.
