Easy Vegetable Bake

|1||potato baking 4 oz|
|3 oz||frozen broccoli|
|3 oz||frozen cauliflower|
|1 can||mushroom soup|
|1 pinch||mixed herbs|
|2 tbsp||dried breadcrumbs|
|1 oz||low fat cheese|
1. Preheat the oven to 180°C.
2. Peel and grate the potatoes, cut the carrot and courgettes into thin matchsticks, cut the broccoli and cauliflower into small florets and finely slice the onion. Place in an oven-proof dish and add the soup and herbs. Mix well and bake in the oven for 20 minutes.
3. After this time, stir in the sliced mushrooms and a little water if necessary, then top the bake with the breadcrumbs and grated cheese, mixed.
4. Bake for a further 10-15 minutes, until golden.
