Curried Potatoes with Peas & Nuts

|1 tsp||vegetable oil|
|1 pinch||cumin seeds|
|4 oz||frozen peas|
|1 small tin||canned tomatoes|
|1 tsp||curry powder|
|½ oz||mixed nuts, additional|
1. Cut the potato into dice and boil for 10-15 minutes or until tender. Drain and set aside.
2. Heat the oil in a non-stick frying pan and add the cumin seeds and crushed garlic. Cook for around a minute and then add the chopped onion and continue to cook until softened.
3. Stir in the peas, tomatoes and curry powder and cook over a low heat for 3-4 minutes.
4. Gently stir in the potatoes and serve.
