    2 tbsp  olive oil
    1 lb  courgettes
    6  spring onions
    1 clove  garlic
    ½ tsp  dried basil
    pinch  paprika
    4  tomatoes
    1 tbsp  tomato purée
    1  bay leaf
    2 tbsp  white wine

Wash the courgettes, top and tail them and cut into ½" slices. Wash the spring onions, top and tail them and roughly chop. Crush the garlic clove.
Heat the oil in a saucepan, add the courgettes, spring onions and garlic, and cook for 3 minutes. Stir in the remaining ingredients with seasoning to taste. Bring to the boil, then cover and reduce the heat to simmer for 15 minutes.
