Courgette and Pepper Bake

3 tbsp | vegetable oil |
1 small | red pepper |
1 small | green pepper |
1 | onion |
1 clove | garlic |
1 lb | courgette |
4 oz | mushrooms |
1/3 pint | milk |
2 | eggs |
4 oz | cheddar cheese |
2 large | tomatoes |
1. Slice the peppers, onion and courgettes. Crush the garlic, chop the mushrooms.
2. Heat the oil in a pan and lightly fry the peppers, onion and garlic for 7-10 minutes, or until beginning to soften.
3. Add the courgettes to the pan with the mushrooms. Stir, then cook for 10-15 minutes, or until all the vegetables are tender.
4. Transfer the prepared ingredients to a greased ovenproof dish and smooth the top.
5. Whisk together the milk, eggs, grated cheese and seasoning, and pour over the vegetables, spreading evenly. Decorate the top with tomato slices.
6. Bake at 375°F/190°C/Mk.5 for 35-40 minutes, or until set. Garnish with parsley sprigs.
Serve with: a salad of raw, finely grated root vegetables, and some French bread.
