Coconut Chicken Curry

    4 oz  chicken fillet
    1 tbsp  double cream
    ¼ pint  chicken stock
    ¼ tsp  ground cumin
    ¼ pinch  ground coriander
    ¼ tsp  ground ginger
    ¼ tin  coconut milk
    ½  red pepper

1. Add low calorie spray to a frying pan. At a medium-high heat fry the chicken fillet cubes.
2. Meanwhile gently heat the double cream and coconut milk in a pan, while adding the spices and finally the chicken stock.
3. Once this has heated up, add the chicken pieces and leave it to simmer for 15-20 minutes, or until cooked through.
