Coconut Chicken Curry

4 oz | chicken fillet |
1 tbsp | double cream |
¼ pint | chicken stock |
¼ tsp | ground cumin |
¼ pinch | ground coriander |
¼ tsp | ground ginger |
¼ tin | coconut milk |
½ | red pepper |
1. Add low calorie spray to a frying pan. At a medium-high heat fry the chicken fillet cubes.
2. Meanwhile gently heat the double cream and coconut milk in a pan, while adding the spices and finally the chicken stock.
3. Once this has heated up, add the chicken pieces and leave it to simmer for 15-20 minutes, or until cooked through.
