Cheesy Scalloped Potatoes

2½ lbs | red potatoes |
3 Tbs | butter |
1/3 cup | chopped green onions |
1/3 cup | chopped red pepper |
1 clove | garlic, minced |
¼ tsp | ground red pepper |
2 cups | whipping cream |
¾ cup | milk |
¾ tsp | salt |
¼ tsp | ground black pepper |
1 cup (4 oz) | shredded swiss cheese |
¼ cup | grated parmesan cheese |
1 Cut potatoes into 1/8" thick slices.
2 Melt butter in Dutch oven over medium-high heat; add green onions & next 3 ingredients. Cook 2 minutes, stirring constantly. Stir in cream & next 3 ingredients.
3 Add potato slices; bring to boil over medium heat & cook 15 minutes or until potatoes are tender, stirring gently. Spoon into lightly greased 11" x 7" x 1½" baking dish; sprinkle with cheeses.
4 Bake at 350° for 45 minutes or until bubbly & golden. Let stand 15 minutes before serving.
