GREEN CHILLI PICKLE (FRIED)

55g (2oz) | green chillies |
30ml (1 fl oz) | cooking oil |
1/4 tsp | whole jeera, (cumin seeds) |
1/4 tsp | whole rai, (black mustard seeds) |
1/4 tsp | hing, (asafoetida) |
1/2 tsp | salt |
1/2 tsp | turmeric powder |
15ml (1/2fl oz) | lemon juice |
1/2 tsp | sugar, (optional) |
30ml (lfl oz) | water |
Method
1. Remove the stems and slice the chillies into halves lengthways. (Remember to wash hands thoroughly after handling the chillies otherwise the chillies leave a burning sensation on them.)
2. Place the cooking oil in a frying pan. Heat the oil to a high temperature; add the jeera, rai, and asafoetida. Leave to cook for a few seconds until they are slightly brown. Add the chillies, salt, turmeric powder, lemon juice, sugar (if used) and water. Bring to the boil. Reduce the heat and simmer for about 5 minutes.
3. Place the cooked chillies in a serving dish.
