FROZEN MIXED VEGETABLE CURRY

If you are in a hurry, then this curry is ideal. It does not take too long to cook, and can be served with plain boiled rice. It is also good served with bread, or chapattis. | |
45ml (1 1/2 fl oz) | cooking oil |
1/2 tsp | whole jeera, (cumin seeds) |
1/2 tsp | whole rai, (black mustard seeds) |
1 large | onion, finely chopped |
2 tsp | tomato puree |
1 tsp | turmeric powder 1 tsp chilli powder 1 tsp garam masala 1 tsp salt |
1 tsp | garlic powder |
450g (1 lb) | frozen, mixed vegetables |
2 small | potatoes, chopped into very small pieces 300ml (l0fl oz) water |
Method
1. Heat the oil to a high temperature in a pan, and add the jeera, rai and chopped onion. Cook together until the onion is golden brown.
2. Add the tomato puree, turmeric powder, chilli powder, garam masala, salt, garlic powder, mixed vegetables and potatoes. Stir continuously and cook for a further 5 minutes.
3. Add the water to the vegetables, and bring to the boil. Reduce the heat and simmer gently for about 20 minutes.
Serve hot.
