Double Cooked Frosting

2 cup | sugar |
1/2 cup | water |
1/8 tsp | cream of tartar |
dash | salt |
2 | egg whites |
1 tsp | vanilla |
Cook sugar, water and cream of tartar to soft ball stage.
Add salt to egg whites and beat until frothy. Place over hot water. Gradually add sugar syrup from step 1. Beating untl form peaks. Add vanilla.
Yield: frosting for 2 - 9" layers
