Cheese, grated, (any type) | |
Blue cheese | |
Milk | |
Green onions, chopped | |

Work the cream cheese until it is creamy. Mix in blue cheese and one or more kinds of grated cheese for flavoring. Add a small amount of milk if the mixture gets too thick. Add green onion and seasoning to taste. Shape into a ball or balls, or a log and roll in sesame seeds.
For a dessert version mix raisins, nuts, chopped dates, and lemon or lime peel with the softened cream cheese. Season with vanilla extract and cinnamon.
To use as a topping, thin the mixture with sour cream or yogurt. Top pancakes, vegetables, salads, grains, grilled cheese sandwiches.
