Spicy Frittata

3 small | new potatoes |
2 | eggs |
1 | egg white |
1 | tomato |
2 | spring onions |
½ tsp | fresh chillies |
1 oz | low fat cheese |
1 serving | mixed salad leaves, additional |
3 tsp | low fat salad dressing, additional |
1 oz | canned kidney beans, additional |
1. Boil the potatoes for 15-20 minutes or until tender.
2. When cooked and cool enough to handle, cut into 1cm (½ in) slices.
3. In a small bowl, beat the eggs and egg whites lightly together.
4. Chop the tomatoes, spring onions and chilli and stir these gently into the eggs, along with the grated cheese.
5. Heat a non-stick frying pan over a gentle heat and arrange the potato slices in layers before pouring in the egg mixture.
6. Cook gently, lifting the egg as it sets to allow uncooked egg to run into contact with the pan.
7. Continue cooking until set, finishing it off under the grill if you prefer.
