Preheat the oven to 200°C. 2. Wash the potato but do not peel. Cut into thick chips and place in a bowl with the oil. Toss well to ensure the chips are all coated with oil. 3. Place on a non-stick baking tray and bake for 20-30 minutes or until almost completely tender. 4. Place the fish fillet over the potatoes and return to the oven until the chips are cooked through and the fish flakes easily - about another 10 minutes, depending on the thickness of the fish.
