Aubergine Pasta with Cheese

    1 tsp  olive oil
    ½  red onion
    1 clove  garlic
    5 oz  aubergine
    4  cherry tomatoes
    ½ tbsp  raisins
    1 pinch  dried parsley
    1 pinch  black pepper
    2 oz  pasta
    1 oz  low fat cheese

1. Heat the oil in a non-stick pan. Add the chopped onion and crushed garlic, and cook for a few minutes to soften. Add the cubed aubergine and halved cherry tomatoes and continue cooking until soft - 10-15 minutes.
2. Meanwhile, prepare the pasta following package directions, omitting any suggested fat and salt.
3. Stir the raisins into the aubergine mix and season with herbs of your choice such as fresh parsley or basil. Serve with the pasta and top with cheese.
