Asian Baked Chicken with Basmati Rice

4 oz | chicken fillet |
¼ tbsp | balsamic vinegar |
½ | onion |
½ | green pepper |
1 small | carrot |
2 oz | sweetcorn |
1 tsp | soy sauce |
1 oz | basmati rice, additional |
1 | orange, additional |
1. Preheat the oven to 180°C.
2. Place the chicken in a baking dish, pour over the soy sauce and vinegar, and then top with the sliced vegetables.
3. Bake for about 40 minutes, covering with foil halfway through the cooking time, or until the chicken is cooked through and no longer pink in the middle.
