Bean & Sweetcorn Bake

1 tsp | olive oil |
½ | red onion |
1 clove | garlic |
1 tsp | fresh chilli |
5 oz | canned mixed beans |
2 oz | frozen sweetcorn |
1 small tin | canned tomatoes |
½ tsp | honey |
1 pinch | dried oregano |
½ oz | low fat cheese |
2 tbsp | dried breadcrumbs |
1. Preheat the oven to 180°C.
2. Heat the oil in a small pan and cook the onion for around 4 minutes to soften slightly. Add the garlic and chilli and then stir in the beans, sweetcorn, tomatoes, honey and oregano. Bring to a boil and simmer for 15 minutes or until slightly thickened.
3. Pour into a casserole dish and top with a mix of cheese and breadcrumbs. Bake for 15-20 minutes, until golden and heated through.
