Montare gli albumi con lo zucchero a velo. Unire le due montate e incorporare a pioggia delicatamente le farine setacciate. Stendere con una spatola francese il composto su silpat o carta da forno a spessore desiderato e cuocere a 200 °C per 12 minuti circa. CREMA PASTICCERA AL CIOCCOLATO: Portare quasi a bollore panna, latte e stecca di vaniglia. A parte in una mezza sfera lavorare zucchero, tuorli e le due farine setacciate. Versare il composto nel latte e panna e portare quasi a bollore andando a frustare. Portare la crema a 65 ° C circa e aggiungere la copertura. Raffreddare in abbattitore. Lavorare in planetaria con la frusta e caricare un sac a poche e utilizzare. CREMA PASTICCERA CLASSICA: Procedimento (vedi crema al cioccolato). PER LA BAGNA ALL’ ALKERMES: Portare a ebollizione acqua e zucchero. Lasciare raffreddare il composto e aggiungere l’alkermes. Caricare un biberon per bagnare. SFERE DI ALKERMES: Aggiungere l’agar nella bagna e portare a bollore. Prestare attenzione all’alcol che potrebbe creare fiamme. Caricare una siringa senza ago e gocciolare il liquido nell’olio di semi messo in congelazione per 15 minuti circa. Recuperare le sfere con un setaccio e sciacquarle sotto acqua tiepida. Assemblare il dessert in una coppa di vetro alternando crema pasticcera, disco di savoiardo bagnato, crema cioccolato, savoiardo bagnato e ultimare con crema classica.
