Carmelized Apples and Yams Categories: Side dish|Vegetarian
Nb persons: 8
Yield:
Preparation time: 30 minutes
Total time: 30 minutes

This warming, hearty winter vegetable saute pairs beautifully with Savory Corn and Vegetable Pudding for a rustic dinner, with or without Rosemary Pork
1 lb  Yams, peeled and sliced into 1/2" thick rounds
1 lb  Apples, Rome Beauty, Golden Delicious or Northern Spy
    1 stick  butter
1 large  Spanish onion, sliced into 1/2" thick rounds
    1/2 tsp  ground cinnamon

1 1. Bring a pot of water to a boil over high heat. Parboil the yams until they are no longer crisp, but will not break apart, about 8 minutes. Peel and core the apples and cut them into 1/2" wide wedges.
2 2. Melt the butter in a large skillet. Add the onion and cook over medium-low heat until very soft and juicy, about 10 minutes. Add the apples and yams; dust with cinnamon.
3 3. Increase the heat to high and saute until the ingredients are attractively browned. Season to taste with salt and pepper.
