    1 cup  apple cider, (to mix with the cheese)
    1/4 cup  apple cider, (to mix with cornstarch and mustard)
    2 tsp.  lemon juice
    1 Tbs.  onion, (finely chopped)
    3 cups  cheddar cheese, shredded
    1 Tbs.  cornstarch
    2/3 tsp.  mustard powder
      white pepper, (to taste)

Heat cider, lemon juice and onions on medium.
Slowly add cheese while stiring.
Mix cornstarch and mustard in 1/4 cup apple cider.
Add mixture to cheese
Add white pepper to taste.
Note: if too sweet, add more lemon juice.
To Dip:
Italian bread (or any crusty bread) cut into bite-sized cubes.
Vegetables, broccoli, cauliflower, bell peppers.
