Baked Oatmeal

Oatmeal: | |
3 cups | old-fashioned oats, uncooked |
1/2 cup | dates, or raisins or apricots |
1/2 t | cinnamon |
1/2 t | salt |
2 ½ cups | milk |
1/2 cup | maple syrup |
4 large | egg whites, lightly beaten |
2 T | butter, melted |
2 t | vanilla |
Topping: | |
1 T | brown sugar |
1 T | sugar |
1/2 t | cinnamon |
Heat oven to 350 degrees. Spray 1 1/2-quart souffle dish with cooking spray.
In a large bowl, combine the oats, dates, cinnamon, and salt; mix well. In a medium bowl combine milk and remaining liquid ingredients. Add milk mixture to dry ingredients and stir. Pour into baking dish.
Bake for 30 minutes. While baking, prepare topping: Combine brown sugar, sugar and cinnamon. Sprinkle on topping and bake for an additional 15-20 minutes or until center puff slightly and is firm to the touch.
