Apple Muffins

| 1 cup | sugar |
| 1/2 cup | butter |
| 1 | egg |
| 1 1/2 cup | flour |
| 1/2 tsp. | baking soda |
| 1/2 tsp. | baking powder |
| 1/2 tsp. | salt |
| 1 tsp. | vanilla |
| 2 cups | apples, cored, peeled and chopped (approximately 3 medium Granny Smith are best) |

| Topping: | |
| 1 1/2 T | sugar |
| 1/2 tsp | cinnamon |
Preheat oven to 375 degrees.
Cream butter and sugar. Beat in eggs. Sift together dry ingredients and add to egg mixture. Stir in vanilla and apples. Fill 12-14 muffin tins with batter. Sprinkle with topping. Place on next to lowest rack in preheated oven.
Bake 20-25 minutes. Turn muffins out of tins and sprinkle wiht powdered sugar while warm.
