Karen's Chicken and Bean Tortilla Soup

1tbsp | olive oil |
1 | red onion, finely chopped |
1 tbsp | garlic, finely minced |
4 | chicken breasts, in cubes |
2 tsp | chili powder |
1 tsp | cumin |
28 oz tin | crushed tomatoes |
28 oz | chicken broth |
1 | bay leaf |
Tin | corn |
4 oz | tin green chiles |
15 oz | tin kidney beans |
4-5 corn tortillas, toasted in strips | |
1/3 cup | cilantro |
3 | scallions, chopped |
Sauté onions. Add garlic, chicken and cook. Add in chili and cumin. Add tomatoes, broth, bay leaf, corn, chiles and beans.
Boil. Cook 20 mins.
Serve with fixings. 10 servings
