55. Stuffed Brinjal (Bhareko bhanta or Bhanta Bharma-Nepali)

4 small | long thin brinjals |
1 medium | onion chopped |
2 cloves | garlic |
2-5 cm | ginger |
1/2 teaspoon | turmeric |
1 tablespoon | coriander powder |
1 teaspoon | aniseed, (sanuf) |

1/2 teaspoon | mango powder, (amchur) |
Salt to taste | |
4 tablespoons | oil |
1/2 teaspoon | chilli, (optional) |
Utensils Karahi or frying pan-1, ladle-1. plate-1, big bowl-1
Process
Make a paste (dry) onion, garlic and ginger with all other spices. Wash brinjals. Cut lengthwise down the middle. Stuff the paste into the brinjal. Heat oil and put
brinjirls in it. Cover and cook slowly till they become tender. Turn several times. Serve hot with rice or bread.
