Tofu vegetable onion soup/gumbo

In large frying pan fry Fry with 2 tbsp butter or margarine | |
1 pound pkg | tofu medium or firm |
5 garlic cloves minced | |
1/2 | Spanish onion |
1 or 2 | cooking onion diced, alternative |
1/2 -1 | red or green or yellow bell pepper |
2 cups | approx of chopped broccoli |
1-2 stalks | sliced celery |
2tbsp | chives |
1-2 tbsp | ground black pepper |
6 | white mushrooms |
1 lb | okra fresh sliced or frozen or half frozen pkg |
For gumbo add more okra Optional beans or corn fresh or canned Optional carrots or baby carrots After frying add to pot with | |
4-8 cups | water depending on how thick you want it |
1 beef steak tomato or 2 Roma or medium vine Small amount of pasta shells or macaroni Onion soup stock to taste with Vegetable soup stock to taste Small amount of salt if needed to taste | |
1-2 tbsp | sugar white |

Optional - chipotle , cyan pepper - franks red hot ,tobacco sauce to taste

Variation just use packages of Knor or Lipton tomato vegetable and onion soup mix
