Sweet Potato Mallow

1 lb | sweet potato, (3 medium) |
1/2 cup | sour cream, (yogurt) |
1/2 teaspoon | salt |
1/4 teaspoon | mace |
1 | egg yolk |
3/4 cup | mini marshmellows |
Do not peel sweet potatoes. Boil in salted water to cover until tender 30-35 minutes. Slip off skins. Pare away any brown marks. Beat with sour cream, salt, mace, egg yolk on medium speed until smooth. Pour into a buttered 1 quart casserole; top with marshmellows. Bake uncovered at 350 F for 30 minutes.
