Orange Raisin Cake

1 cup | raisins |
1/2 cup | walnuts |
Peel of 1 medium orange white membrane removed | |
1 cup | sugar |
1/2 cup | butter |
2 | eggs |
1 teaspoon | vanilla |
2 cups | sifted cake flour |
1 teaspoon | baking soda |
1/2 teaspoon | salt |
1 cup | buttermilk |
Glaze | |
1 cup | sugar |
1/3 cup | orange juice |
Combine raisins, nuts, peel and put through food grinder. Cream together 1 cup sugar, butter add eggs and vanilla. Beat until fluffy. Stir in ground raisin mixture. Sift together flour, baking soda, salt. Add dry ingredients to creamed mixture. Alternate with buttermilk. Beating well after each addition. Turn into greased 9x9x2" pan 350°F 45 minutes. Prick top of cake, spoon over glaze.
