Quick Baked Cod

1/2 pound | Alaska cod fillets, thawed if necessary |
Salt and pepper | |
1 | tomato, peeled and chopped |
1 1/2 teaspoons | green onion, chopped |
1/4 teaspoon | basil, crushed |
AND | |
1/4 teaspoon | oregano |
1 teaspoon | butter or margarine |
1/4 cup | shredded Monterey jack cheese |
1 tablespoon | grated Parmesan cheese |
Cut cod into serving-size pieces; place in buttered baking dish. Sprinkle with salt and pepper. Combine tomato, onion and seasonings; spoon over cod.
Dot with butter. Bake at 450ºF 8 to 10 minutes or until cod flakes easily when tested with a fork. Sprinkle with cheeses; bake until melted.
