Fried Chicken - Dean’s

The batter | |
1/4 C | self rising flour |
1/4 C | corn starch |
3/4 C | water |
2 T | Franks Red Hot |
The breading | |
1 1/2 C | self rising flour |
1 tsp | onion salt |
1 tsp | celery salt |
1 tsp | garlic salt |
1 tsp | paprika |
Thinly slice chicken breast and pound flat. Either brine chicken for 2 hours in basic brine or salt and pepper each side. If u brine it be sure to rinse brine off before batter and breading.
Mix batter in bowl. In separate bowl mix flour and seasonings to make the breading. Coat chicken in breading. Dip chicken in batter. Place chicken into breading and coat well. Push down gently to make sure breading sticks.
Fry in oil for 5 min then drain on paper towels.
