Lentil Sloppy Joes

1 | onion, finely chopped |
1 tbsp | olive oil |
4 stalks | celery, diced |
4 cloves | garlic, minced |
1/2 tsp | dried oregano |
1/2 tsp | salt |
freshly ground pepper to taste | |
1/2 cup | ketchup |
1/2 cup | water |
1 tbsp | balsamic vinegar |
1 tbsp | brown sugar |
1 tbsp | Dijon mustard |
2 cup | lentils, cooked |
Heat olive oil and add onion and celery. Cook for about five minutes, until tender. Add garlic, oregano, salt and pepper and cook another minute. Add ketchup, water, vinegar, brown sugar and mustard and mix together well and heat through. Put lentils in slow cooker liner and add sauce. Stir together until well mixed. Cook on low for hours. Add hot sauce, if desired, and serve over toasted whole wheat rolls.
