Cincinnati Chili Mac

1 tbsp | olive oil |
1 cup | chopped onion |
1 medium | green bell pepper, diced |
1 medium | red bell pepper, diced |
1 small | hot chile pepper, minced (or one 4-ounce can chopped green chilies) |
one 28-oz can | diced tomatoes |
two 16-oz cans | beans, kidney or red beans, drained and rinsed |
1 to 2 tsp | chili powder |
1 tsp | ground cumin |
1 tsp | dried oregano |
1/2 tsp | ground cinnamon |
12 to 16 oz | spaghetti |
1. Heat oil in large saucepan. Add onion and saute over medium heat until transluscent. Add bell peppers and saute until onion is golden.
2. Stir in remaining ingredients except spaghetti and bring to simmer. Cover and simmer gently for 20 minutes or until vegetables are tender.
3. Meanwhile, cook spaghetti.
4. To serve, place small amount of spaghetti in a bowl and top with chili. Top with fresh diced tomatoes, green onions and/or shredded cheddar.
