|2 cloves||garlic minced|
|1||whole roasted red bell pepper, peeled, seeded, and chopped. (1/2 C)|
|4 oz.||softened cream cheese|
|1/2 tsp||kosher salt|
|8 oz. (2 C)||shredded cheddar cheese|
|8 oz. (2 C)||shredded Monterey Jack|
Mix all ingredients except shredded cheese in stand mixer with paddle attachment.
Add shredded cheeses and beat until combined. Cover and refrigerate for at least one hour or overnight.
