Pimento cheese

2 cloves | garlic minced |
1 | whole roasted red bell pepper, peeled, seeded, and chopped. (1/2 C) |
4 oz. | softened cream cheese |
1/2 C | mayonnaise |
1 tsp | cayenne |
1/2 tsp | kosher salt |
8 oz. (2 C) | shredded cheddar cheese |
8 oz. (2 C) | shredded Monterey Jack |
Mix all ingredients except shredded cheese in stand mixer with paddle attachment.
Add shredded cheeses and beat until combined. Cover and refrigerate for at least one hour or overnight.
