Pimento cheese

    2 cloves  garlic minced
    1  whole roasted red bell pepper, peeled, seeded, and chopped. (1/2 C)
    4 oz.  softened cream cheese
    1/2 C  mayonnaise
    1 tsp  cayenne
    1/2 tsp  kosher salt
    8 oz. (2 C)  shredded cheddar cheese
    8 oz. (2 C)  shredded Monterey Jack

Mix all ingredients except shredded cheese in stand mixer with paddle attachment.

Add shredded cheeses and beat until combined. Cover and refrigerate for at least one hour or overnight.
