Hot Sauce

    15-20  red jalapeños, habanero, cayennes, seeded cut in half
    8-10  Garlic cloves
Onion 1 medium diced or sliced
    4 T  Light Brown sugar
    2 T  Soy sauce
    1  Fresh ginger, 2 oz. sliced
    1 T  Salt
    2 C  White vinegar
    1/2 C  Water

Remove seeds from peppers. Sauté peppers, onion and garlic for 3-5 minutes.

Add remaining ingredients and bring to boil. Reduce heat and simmer for 10-20 min.

Blend until smooth. Strain then jar?
